Oh my word, oh my word, oh my word – we have got the most delicious little bite sized treat for you today! We were playing around in the kitchen the other day and we ended up with a winner of a recipe. If you haven’t guessed by now, we love cheesecake. Especially lemon cheesecake. And coconut, we love coconut. So, we thought, why not bring them all together to make the most epic Lemon and Coconut Cheesecake Balls! These little treats are ridiculously good – packed with lemon and coconut goodness, and have just the right amount of sweet and sour flavours. Plus, they are SO easy to make.

Lemon and Coconut Cheesecake Balls

Lemon and Coconut Cheesecake Balls

Ingredients:

125 grams full fat cream cheese
zest and juice of half a lemon
1 generous tablespoon of honey
1 cup desiccated coconut
1/2 cup desiccated coconut for rolling in

Method:

Place the cheese, lemon and honey into a bowl and mix until smooth and well combined.
Add the coconut and mix again.
Use your hands to shape the mixture into balls. Roll the balls through the extra coconut to coat.
Place in the fridge to set.
Eat and enjoy!

Makes 10 medium sized balls (double the mixture if you need a bigger batch)
