I think, in fact, I know that I have created the best healthy date balls recipe ever! I’ve played around with different combinations for a little while now and while they’ve all been super tasty and moreish, these ones right here are by far THE BEST! Seriously easy to make, healthy and so YUM. What more could you ask for?

Healthy Date Balls

Ingredients:

250g pitted dates
¾ cup desiccated coconut
¼ cup ground almonds
A few drops of vanilla essence

Method:

Soak pitted dates in boiling water for 10 minutes.
Remove dates from water and blend into a smooth paste.
Add coconut ground almonds, vanilla essence and mix.
Roll mixture into balls (makes about 20, depending on size) and cover in coconut.
Refrigerate for an hour and VOILA!

Grab a book, make yourself a cup of tea, grab a healthy date ball or two and settle in for a lazy afternoon.
