Guys, how cold is it in Cape Town at the moment?! I pretty much wake up and dream about being back in bed as quickly as possible. It’s so cold. My toes and nose and ears and fingers are frozen. The last few days have been all about getting home and climbing into my warm onesie, thick socks and slippers as fast as humanly possible and then whipping up a quick and healthy dinner, eating and jumping into bed with series or my book. Winter – you can go now. Anyway, I want to share this delicious Chicken stir fry with ginger and sesame seeds recipe with you. We made it the other night and have been drooling over it since. Thank you Daily Dish for introducing us to this full of flavour, quick and easy winner-winner chicken dinner. It is warm and tasty and oh so good for you!
Chicken stir fry with ginger and sesame seeds
6 free range chicken breasts – cut into thin strips
1 head broccoli – cut into long pieces, use the stem too
2 onions – peel and cut into big chunks
2 tbsp fresh ginger – peel and slice finely
2 cloves garlic – peel and slice finely
2 red peppers – slice finely
4 tbsp soy sauce
2 tbsp hoisin sauce
2 tbsp sesame seeds
3 tbsl oil
Place a small pan on high heat and dry roast the sesame seeds until lightly browned – about a minute. Toss often to make sure they don’t burn. Remove from stove and set aside.
Heat oil in a pan or wok on medium to high and stir fry the garlic, ginger and onions.
Once they are cooked and translucent add the chicken and stir fry for 3 – 4 minutes.
Add the broccoli and red pepper, then stir fry for 2 – 3 minutes till tender but with a slight crunch.
Add the soy sauce and the hoisin sauce and cook for another 3 minutes.
To serve, divide the chicken stir fry between the plates and sprinkle the toasted sesame seeds on top.
