Do you love Easter as much as me? I think it’s my favourite time of year – I love all the bunnies, chocolates and feasting, but most of all, I LOVE that I can pig out on hot cross buns.  Breakfast, lunch and dinner. They are my favourite Easter treat and get me way more excited than all the chocolates eggs. Happiness is a lightly toasted hot cross bun that is smothered in butter and washed down with a hot cup of tea. So, you can imagine my excitement when I found a Banting Hot Cross Buns recipe on the Pick n Pay website… guess what I’ll be doing on Friday?!

Banting Hot Cross Buns

Banting hot cross buns with spiced butter
Pick n Pay


180ml coconut flour
125ml almond flour
5ml baking powder
1 pinch salt
3 eggs, beaten
60ml milk
1 freshly squeezed orange juice, peel grated
3ml cinnamon
3ml nutmeg
60ml unsweetened cranberries

Cross batter:

1 egg white
60ml coconut flour

Spiced butter:

125g butter
5ml cinnamon
3ml nutmeg

Preheat oven to 180 degrees
Mix coconut and almond flour.
Add baking powder and salt. Mix well.
Add eggs, milk, orange peel and spices and mix well.
Stir in cranberries and shape into 5-6 small palm-sized buns.
Bake on baking tray for 15-20 minutes until golden.
Mix cross batter and place in a piping bag.
Pipe a cross onto each bun and bake for 5 minutes.
Stir butter and spices together and serve with buns.
