I am very much a fan of breakfast. All kinds of breakfast. Hot breakfast, cold breakfast, weekend breakfast, banting breakfast. I love that there are so many delicious options and I love that no matter the time or the day, I am always game for a good brekkie. I’ve been looking for a few new recipes to try out lately and I came across these winning banting breakfast recipes. How good do they look? And super easy too.

Eggs, Ham, Olives and Vine Tomato Bake

Banting Breakfast - Egg Bakes

Ingredients:

  • 3 egg whites
  • 3 egg yolks
  • 150g cream cheese
  • 4 eggs
  • 1 tbsp almond flour
  • 4 sprigs fresh rosemary
  • 1 tbsp duck fat
  • 250g button mushrooms
  • 100g spanish green olives
  • 4 slices ham
  • 4 balls bocconcini
  • 350g vine tomatoes
  • to taste extra virgin olive oil
  • Himalayan salt
  • freshly ground black pepper

Method:

  1. Preheat the oven to 180°C.
  2. For the base: Separate 3 eggs and whisk together egg yolks and cream cheese until smooth. In a separate bowl whisk the egg whites until stiff peaks form. Fold the almond flour and egg whites into the cream cheese mixture. Sprinkle over the rosemary.
  3. Spoon the mixture into an oiled and lined 20cmx20cm oven dish and bake for 20-25 minutes.
  4. For the topping:Halve your mushrooms before heating the duck fat in a frying pan. Toss in the mushrooms and sauté until soft, remove and set aside.
  5. Remove the base from the oven, halve your bocconcini and top the base with the sautéed mushrooms, olives, thickly cut ham slices and cheese. Gently press 4 hollows into the base and crack the eggs into the hollows. Top with vine tomatoes, season well
  6. Bake for 15-20 minutes or until eggs are cooked through.
  7. To serve:Slice, serve warm, drizzled with olive oil and sprinkled with fresh herbs.

Strawberry and Coconut Muffins

Banting Breakfast - Muffins

Ingredients:

  • 500ml desiccated coconut
  • 15ml baking powder
  • 125ml xylitol
  • 4 extra large eggs
  • 10ml vanilla essence
  • 80ml melted butter
  • 1 pinch salt
  • 6 strawberries, sliced

Method:

  1. Preheat oven to 180 degrees
  2. Grease and line a muffin pan with 12 paper cases
  3. Mix all ingredients and half the strawberries together in a bowl and beat until well combined
  4. Set aside for 20 minutes
  5. Spoon mixture into paper muffin cases and top each with sliced strawberry
  6. Bake for 20-25 minutes or until puffed and cooked through
  7. Cool slightly before serving

Chocolate Shake

Banting Breakfast - Chocolate Shake

Ingredients:

  • 1 tin coconut milk
  • ½ tsp vanilla essence
  • Honey
  • 2tsp Macadamia butter
  • 2tsp cocoa powder
  • Ice blocks

Method:

  1. Blitz all liquid ingredients together until all incorporated and frothy.
  2. Pour over the ice.
